Beef Swiss and Mushroom Hash

Ingredients
  

  • 1 pound ground beef
  • 1 1/2 tsp kosher salt divided
  • 1 tsp black pepper divided
  • 2 tsp Worcestershire sauce
  • 1 tsp mustard powder
  • 8 oz mushrooms quartered
  • 1 red bell pepper diced
  • 3 Tbsp canola oil
  • 3 cups frozen shredded potatoes
  • 1 1/2 cups shredded Swiss cheese

Method
 

  1. In a large mixing bowl combine ground beef, 1/2-teaspoon salt, 1/2-teaspoon pepper, Worcestershire and mustard powder; mix to incorporate seasonings.
  2. Heat oven-safe skillet over medium-high heat and brown beef mixture, breaking it up as it cooks; transfer to a clean plate.
  3. Add mushrooms, bell pepper and onions to the hot pan and sear 3 to 4 minutes or until they begin to brown; transfer to beef plate. Add oil to the pan and sauté potatoes until golden brown and crisp. Return beef, mushrooms and onion to pan; mix well.
  4. Top hash with Swiss cheese and broil for 2 minutes, or until cheese melts; garnish with sliced green onion.
