Roast Beef Fajita Quesadilla

Ingredients
  

  • 1 pound deli roast beef thinly sliced and cut into 1/2-inch ribbons
  • 2 tsp canola oil
  • 1 small Vidalia® Onion or yellow onion thinly sliced
  • 1 poblano pepper seeded and thinly sliced
  • 1/2 tsp coarse kosher salt
  • 1 Tbsp plus 1 teaspoon fajita seasoning
  • 2 Tbsp butter
  • 4 (12 inch) flour tortillas
  • 2 cups shredded Colby jack cheese

Method
 

  1. Heat canola oil in a medium skillet over medium-high heat. Add onion and poblano pepper, season with 1 teaspoon salt; sauté 3 to 5 minutes or until onion and pepper have softened. Transfer to a mixing bowl, toss in beef ribbons and fajita seasoning, mix well to combine.
  2. Melt 11/2 teaspoons butter in a 12-inch skillet over medium heat. Add tortilla, sprinkle 1/2 cup cheese over the whole tortilla. Cover half of the tortilla with beef, onion and pepper mixture, then fold uncovered half of tortilla over filling. Cook 2 to 3 minutes until golden brown. Flip and continue to cook on second side 2 to 3 minutes or until golden brown. Repeat with remaining tortillas and filling.
